THE WINERY
Combining the tradition of farming with the art of oenology, we dedicate ourselves to both the cultivation of the land and the production of quality wines, always from organic grapes. Our philosophy is based on respect for nature and on obtaining authentic wines with personality that express the uniqueness of the territory.
The winery is located just 3kms from Valls, halfway through Nulles, in an area known as Calders. It is a small building packed with history, formerly used for agricultural work, which we have carefully rehabilitated and adapted for winemaking. Surrounded by vineyards, the winery is in a privileged environment that allows us to closely control the entire process, from the vineyard to the bottle.
Our wine is born in the vineyard, where we work with patience and dedication. The harvest is done manually at the optimal moment of grape ripeness, collecting the grapes in 20-kilo boxes to ensure their quality and achieve a high-quality selection.
Once in the winery, we start the fermentation naturally, preserving the aromas and essence of the grape. We do not add commercial yeasts, but rely on the native yeasts inherent in the grape skin, thus maintaining the identity of each vintage. The process is minimally interventionist, without additives, except for a small dose of sulfites in some wines to ensure good preservation.
After fermentation, pressing, and aging in oak barrels, the time comes to define the ‘coupages’ (blends), to then bottle and label each wine in the same winery. In this way, each bottle that leaves our winery tells a story of territory, tradition, and passion for the vineyard.
